Chips and salsa upon arrival First course Uchepos sweet corn tamales drizzeld with poblano cream sauce and melted chihuahua cheese. Main course choice of one Tilapia al Mojo de Ajo grilled tilapia in a garlic-extra virgin olive oil sauce with avocado, green onion, tomato and black beans served with mexican white rice. Cochinita Pibil slow cooked pork shoulder in banana leaf with achiote, sour orange and sweet spices served with pickled yucatean onions, black beans and habanero sauce on the side. Pollo en Mole Negro grilled chicken breast in a toasty-earthy slightly sweet mole negro served with mexican white rice.
